How to cook Thai chicken in pressure cooker
I had this Thai chicken for the first time at ICA Porson, the supermarket in Porson closeby where I work. I was hungry and did not bring my lunch. One of the lunch options available is ICA that serves both salad and Thai buffet. I tried this Thai chicken and I loved it. It is really delicious. Of course once I fall in love with a dish, I always try to cook it myself. After googling, trying and modifying some recipes, I found the perfect one. Now I want to share with you how to cook Thai chicken in the high pressure cooker in 15 minutes.
Ingredients for chicken marinate
- 500 g chicken breast
- 3/4 cup peanut butter
- 400 g coconut milk
- 3 tbsp red curry paste
- 1 tbsp curry powder
- 2 tsp salt
- 1/4 cup sugar
- 2 tbsp cider vinegar or white vinegar
- 2 tsp dark soy sauce
Serving
- Cucumber. Cut it into small squares.
- Tomatoes. Cut half.
- Lime wedges
Time needed: 30 minutes.
How to cook Thai chicken in high pressure cooker
- Marinate the chicken
Marinate the chicken with the ingredients overnight or at least 30 minutes in the fridge.
- Cook the chicken in the pressure cooker
Cook the chicken in the high pressure cooker for 15 minutes.
- Serve the Thai chicken
Serve it with cucumber, tomatoes, and lime wedges. You can even squeeze the lime into the chicken to add juicy flavour.
